12 Pallet Vacuum Cooler – CC-VC-1200
The Cold Change 12 Pallet Vacuum Cooler CC-VC-1200 is a high-capacity industrial vacuum cooling system designed for large commercial growers, packhouses and fresh produce processors.
With capacity for 12 pallets per cooling cycle and loads of up to 800kg per pallet, the CC-VC-1200 can accommodate up to approximately 9,600kg of product per batch.
Also known as a 12 pallet vacuum chiller, vacuum pre-cooler or industrial vacuum cooling machine, the system is designed for rapid removal of field and product heat.
Typical cooling cycles range from approximately 8–25 minutes. Actual cooling time depends on the product, pallet weight, starting temperature and required final temperature.

High-Capacity Commercial Vacuum Cooling
The CC-VC-1200 is designed for operations where large quantities of fresh produce need to be cooled quickly.
Twelve pallet positions provide substantial batch capacity. At maximum stated loading, the system can accommodate approximately 9.6 tonnes of product during one cooling cycle.
This makes the machine particularly suitable for large farms, commercial packhouses, grower groups and fresh produce processing facilities.
For a smaller-capacity system, view our 10 Pallet Vacuum Cooler or 8 Pallet Vacuum Cooler.
What Products Can Be Vacuum Cooled?
Cold Change vacuum cooling systems can be configured for many different products.
Applications include:
- Mushrooms
- Lettuce
- Broccoli
- Cauliflower
- Leafy vegetables
- Spinach
- Herbs
- Celery
- Sweetcorn
- Fresh vegetables
- Flowers and cut flowers
- Turf
- Selected bakery products
Different products have different cooling characteristics. Therefore, Cold Change can configure cooling programs around the customer’s product and required temperature.
How Does Vacuum Cooling Work?
A vacuum cooler or vacuum chiller rapidly removes heat by reducing the pressure surrounding the product.
First, loaded pallets enter the sealed vacuum chamber.
Industrial vacuum pumps then reduce the pressure inside the vessel.
As pressure falls, the boiling point of water also falls. A small quantity of moisture can then evaporate from suitable products at low temperature.
This evaporation removes heat from the product.
As a result, suitable fresh produce can be cooled rapidly throughout the load.
This is why vacuum cooling can provide extremely fast and uniform post-harvest cooling for suitable products.
High-Volume Mushroom Cooling
Fresh mushrooms can retain significant product heat following harvest.
Rapid cooling can therefore play an important role before packing, cold storage and distribution.
A 12 pallet mushroom vacuum cooler provides substantial capacity for large mushroom farms and commercial packing operations.
Twelve pallets can be processed during each cooling cycle. This allows the cooling system to keep pace with much higher harvesting volumes.
Read our Vacuum Cooling Mushrooms Guide for more information about mushroom cooling and post-harvest temperature management.
Lettuce & Leafy Vegetable Cooling
Vacuum cooling is widely used for lettuce and other leafy crops.
Large commercial growers can harvest significant quantities of produce within a relatively short period. Cooling equipment therefore needs enough capacity to prevent harvested produce waiting unnecessarily for cooling.
The CC-VC-1200 allows 12 pallets to enter the vacuum cooling cycle simultaneously.
This makes it suitable for high-volume lettuce and leafy vegetable production.
Read our Vacuum Cooling Lettuce Guide and Vacuum Cooling Leafy Vegetables Guide for further information.
Broccoli, Cauliflower & Vegetable Cooling
Broccoli continues to respire after harvest. Therefore, removing field heat quickly can be important during post-harvest handling.
A high-capacity vegetable vacuum cooler can rapidly reduce the temperature of suitable vegetables before packing, cold storage and refrigerated transportation.
The 12 pallet chamber provides the capacity required by larger vegetable farms and central packhouses.
Vacuum pre-cooling may also be suitable for cauliflower, herbs and other fresh produce.
Up to 9,600kg Per Batch
Production throughput is one of the main advantages of the CC-VC-1200.
With 12 pallet positions and loads of up to 800kg per pallet, maximum stated batch capacity is approximately 9,600kg.
Actual hourly throughput depends on:
- Product type
- Product weight
- Starting temperature
- Required final temperature
- Cooling cycle time
- Loading and unloading time
- Daily operating hours
Cold Change can calculate the required system capacity based on pallets per hour, kilograms per hour or tonnes per hour.
Correct system sizing helps ensure the vacuum cooler can keep pace with the production process.
